- 500g floury potatoes such as King Edward, cut into wedges
- Low-calorie cooking spray
- 4 tomatoes, quartered, deseeded and thinly sliced
- 1 medium red onion, finely chopped
- 1 garlic clove, grated
- ½ small pack fresh coriander, roughly chopped
- Grated zest and juice of 2 unwaxed limes, plus slices or wedges to serve
- 100g plain unsweetened soya yogurt with added calcium
- 1 tsp smoked paprika
- 400g can mixed beans or kidney beans in chilli sauce
- 3 spring onions, thinly sliced
