  • 1 medium floury potato, such as Maris Piper or King Edward
  • 1 medium sweet potato
  • 50g dried quinoa
  • 1 echalion shallot (or ½ small onion), chopped
  • 3 garlic cloves, chopped
  • 5cm piece fresh root ginger, peeled and chopped
  • Zest and juice of 1 unwaxed lime
  • 2 tsp ground coriander
  • Small pack fresh coriander, chopped
  • ½ small pack fresh basil, leaves picked and chopped
  • 1 lemongrass stick, outer leaves discarded, smashed and chopped
  • 1 red chilli, deseeded and chopped
  • 150g soya beans (edamame), chopped
  • 50g frozen sweetcorn, thawed
