- 1 medium sweet potato
- 50g dried quinoa
- 1 echalion shallot (or ½ small onion), chopped
- 3 garlic cloves, chopped
- 5cm piece fresh root ginger, peeled and chopped
- Zest and juice of 1 unwaxed lime
- 2 tsp ground coriander
- Small pack fresh coriander, chopped
- ½ small pack fresh basil, leaves picked and chopped
- 1 lemongrass stick, outer leaves discarded, smashed and chopped
- 1 red chilli, deseeded and chopped
- 150g soya beans (edamame), chopped
- 50g frozen sweetcorn, thawed
- Low-calorie cooking spray
