  • 2 large tomatoes, deseeded and finely chopped
  • 1 red chilli, deseeded and thinly sliced
  • 1 tbsp tomato purée
  • 2 tbsp red wine vinegar
  • 1 level tsp chipotle chilli paste
  • ½ tsp garlic granules
  • 1 tsp dried oregano
  • 175g raw jumbo or king prawns
  • Low-calorie cooking spray
  • A few fresh thyme sprigs, leaves picked and roughly chopped
  • 2 Slimming World white tortilla wraps (if you’re using wholemeal wraps and counting the Syns, deduct ½ Syn per serving)
  • Handful shredded white or red cabbage leaves
  • 1 small carrot, peeled and coarsely grated
  • Large handful fresh coriander leaves, optional, to serve
  • Large handful fresh parsley leaves, optional, to serve
