Serves 4
- 2 tsp ground cumin
- 2 tsp sweet smoked paprika
- 2 tsp dried oregano
- Grated zest and juice of 1 unwaxed lemon
- 4 thick-cut or 8 thin-cut lean lamb leg steaks, visible fat removed, cut into chunks
- 2 medium red onions, cut into wedges
- 2 large peppers (any colours), deseeded and cut into chunks
- Lemon wedges, to serve
- Mixed salad, to serve

- A few fresh mint leaves, to serve
