- 1 cal cooking spray*
- 3 skinless and boneless chicken breasts, diced
- 1 onion, diced
- 2 garlic cloves, crushed
- 2 sweet potatoes, peeled and cut into chunks
- 2 carrots, peeled and sliced
- 1 red pepper, deseeded and diced
- 1 courgette, diced
- 2 tbsp smoked paprika
- 1 tsp mixed herbs
- 400g can kidney beans, drained and rinsed
- 400g can pinto beans, drained and rinsed
- 400g borlotti beans, drained and rinsed
- 400g can chopped tomatoes
- 400ml hot vegetable stock
- 100g tomato purée
- Handful chopped fresh flat-leaf parsley, to serve (optional)
