Serves 4

  • 1 cal cooking spray*
  • 600g lean topside of beef, visible fat removed, cut into bite-size chunks
  • 2 medium red onions, 1 roughly chopped, 1 cut into 6 wedges
  • 3 garlic cloves, peeled
  • 5cm piece fresh root ginger, peeled and roughly chopped
  • 2 lemongrass stalks, outer leaves discarded, crushed and roughly chopped
  • 400g can chickpeas, liquid from the can (aquafaba) reserved
  • 2 tsp ground cinnamon
  • ½ tsp ground cloves
  • Seeds from 1 cardamom pod, crushed
  • 400g mushrooms, sliced
  • 1 beef stock cube, crumbled
  • 1 tsp tomato purée
  • 2 medium peppers (1 red and 1 yellow), deseeded and diced
  • 1 tbsp dark soy sauce or tamari
  • Juice of 1 lime
  • 2 red chillies, deseeded and chopped
  • 1 tsp coconut extract (optional)
  • Long-grain rice, to serve
  • Your favourite Speed vegetables, to serve (we used pak choi)
