Serves 4

  • 1 large cauliflower, broken into florets
  • 5 tbsp tikka curry powder*
  • Low-calorie cooking spray
  • 1 large sweet potato, diced
  • 2 medium red peppers, deseeded and cut into large chunks
  • 2 red onions, cut into wedges
  • 4 garlic cloves, crushed
  • 5cm piece fresh root ginger, peeled and chopped
  • 5 tbsp tomato purée
  • 2 tsp ground cumin
  • 2 tsp garam masala
  • 2 tsp ground coriander
  • 1 large brown onion, diced
  • 2 tbsp nigella seeds
  • 1 vegetable stock cube, suitable for vegans
  • 300g passata
  • 4 tbsp plain unsweetened soya yogurt with added calcium
  • ½ small pack fresh coriander, roughly chopped
  • *Spice blends are Free so long as they’re made from herbs and spices only and don’t include any Synned ingredients like sugar and flour. Check the label to be sure and count the Syns as necessary.
