Serves 4

  • 500g lean beef mince (5% fat or less)
  • 1 cal cooking spray*
  • 1 onion, finely chopped
  • 3 garlic cloves, crushed
  • ½ tsp dried thyme
  • 1½ tsp chicken seasoning*
  • 1 tbsp smoked paprika
  • 1 tbsp tomato purée
  • 680-700g jar passata
  • 400ml chicken stock, made with 1 stock cube
  • 2 x 400g cans black-eyed beans, drained and rinsed
  • 250g dried long-grain rice
  • Green salad, to serve

For the plantain:

  • 2 plantain, peeled, halved lengthways and cut into 1.5cm semi-circles (available from African and Caribbean supermarkets)
  • 1 tsp ground ginger
  • 1 tsp smoked paprika
  • ½-1 tsp chilli powder
