Serves 4
- 500g lean beef mince (5% fat or less)
- 1 cal cooking spray*
- 1 onion, finely chopped
- 3 garlic cloves, crushed
- ½ tsp dried thyme
- 1½ tsp chicken seasoning*
- 1 tbsp smoked paprika
- 1 tbsp tomato purée
- 680-700g jar passata
- 400ml chicken stock, made with 1 stock cube
- 2 x 400g cans black-eyed beans, drained and rinsed
- 250g dried long-grain rice
- Green salad, to serve
For the plantain:
- 2 plantain, peeled, halved lengthways and cut into 1.5cm semi-circles (available from African and Caribbean supermarkets)
- 1 tsp ground ginger
- 1 tsp smoked paprika
- ½-1 tsp chilli powder
