Serves 4

  • 600g seitan (see tip)
  • 3cm piece fresh root ginger, peeled and grated
  • 4 tbsp light soy sauce
  • 1 small red onion, thinly sliced
  • Pinch of sweetener granules
  • 3 tbsp cider vinegar
  • 200g plain unsweetened soya yogurt with added calcium
  • 1 tbsp garlic granules
  • 1 cal cooking spray*
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • ½ tsp paprika, plus extra to serve
  • 1 tsp dried oregano
  • 4 x 60g wholemeal pitta breads
  • Shredded white cabbage and iceberg lettuce, to serve
  • Sliced tomatoes, to serve
  • A few pickled chillies, to serve
