- 600g seitan (see tip)
- 3cm piece fresh root ginger, peeled and grated
- 4 tbsp light soy sauce
- 1 small red onion, thinly sliced
- Pinch of sweetener granules
- 3 tbsp cider vinegar
- 200g plain unsweetened soya yogurt with added calcium
- 1 tbsp garlic granules
- Low-calorie cooking spray
- 2 tsp ground cumin
- 2 tsp ground coriander
- ½ tsp paprika, plus extra to serve
- 1 tsp dried oregano
- 4 x 60g wholemeal pitta breads
- Shredded white cabbage and iceberg lettuce, to serve
- Sliced tomatoes, to serve
- A few pickled chillies, to serve
