  • 1 small onion, finely chopped
  • 1 carrot, coarsely grated
  • ½ red pepper, deseeded and finely chopped
  • 1-2 tsp mild curry powder*
  • 2 x 400g cans of butter beans, drained and rinsed
  • 110g sweetcorn kernels, drained
  • 60g fresh wholemeal breadcrumbs
  • 1 medium egg, beaten
  • 900g floury potatoes, such as Maris Piper or King Edward, cut into 1cm-thick chips
  • 1 cal cooking spray*
  • 4 x 65g wholemeal bread rolls, halved
