- Low-calorie cooking spray
- 1 onion, finely chopped
- 2 celery sticks, finely chopped
- 1 red pepper, deseeded and diced
- 1 large carrot, peeled and grated
- 2 skinless and boneless chicken breasts, cut into bite-size chunks
- 1 tbsp each of garam masala, garlic granules, ground ginger and dried fenugreek leaves
- ½ tsp each of ground cumin and cayenne pepper
- 100ml chicken stock
- 50g mangetout, halved
- 3 large mushrooms, thinly sliced
- 4 large potatoes, peeled and roughly chopped
- 1 tsp ground turmeric
- 1 egg, beaten
- 1 tbsp finely chopped fresh parsley
- Your favourite Speed veg, to serve
