Serves 4
- 750g large new potatoes
- 1 cal cooking spray*
- 160g sugar snap peas
- 12 Slimming World sausages, defrosted (or use other low-fat sausages and count the Swips)
- 100g watercress
- 1 bunch spring onions, thinly sliced
- 1 tbsp red wine vinegar
For the salsa:
- 1 small fresh ripe pineapple, peeled and finely diced (or 500g fresh ready-chopped chunks, finely diced)
- 1 red chilli, finely diced
- 20g fresh coriander, leaves chopped
- 20g fresh chives, finely chopped
- 1 red onion, finely chopped
