  • 400g fresh cherries, halved and stoned
  • 1 large red onion, thinly sliced
  • 5 tbsp balsamic vinegar
  • 2 level tbsp clear honey
  • ½ tsp ground allspice

For the pickled sprouts:

  • 250g Brussels sprouts, trimmed and halved
  • 100ml red wine vinegar
  • 1 tsp mixed pink and black peppercorns
  • 1 garlic clove, thinly sliced

  • 2 level tsp soft dark brown sugar
