Fantastically filling and packed with wonderfully warming flavours, a Slimming World chickpea curry is a quick and easy meal that’s perfect for busy weeknights – or for a fuss-free Friday night fakeaway.

Curries are a brilliant, budget-friendly way to spice up your store-cupboard staples (as well as any leftover chicken or vegetables you’ve got in the fridge) and make a tasty meal. This recipe takes a handful of basic ingredients – chickpeas, spinach, cauliflower and chopped tomatoes – sprinkle over some spices, and in half an hour there’s a delicious chickpea and spinach curry, ready to serve.

Even better, this Slimming World chickpea curry is vegan-friendly and, if you double up on the ingredients, you can freeze any leftovers to keep as a handy lunch option if you’re working from home, or a quick, healthy dinner if you’re a key worker coming in late after a busy shift. 

Serve with rice (couscous or cauliflower rice taste just as good – or you could even enjoy this satisfying curry without a side) and a dollop of fat-free natural yogurt, and this chickpea and spinach curry is sure to hit the spot.

Slimming World chickpea curry recipe

Serves 1
Ready in 30 minutes
Free

What you need:

low-calorie cooking spray
2 tsp curry powder (heat level to your taste)
225g small cauliflower florets
215g can chickpeas, drained and rinsed
230g can chopped tomatoes
50g baby spinach leaves
dried chilli flakes, to serve (optional)

What you do:

1. Spray a non-stick saucepan with low-calorie cooking spray and place over a medium heat. Add the curry powder, cook for 1 minute then add 4 tsp of water. Increase the heat to high, bring to the boil and bubble for 1-2 minutes.

2. Add the cauliflower, chickpeas, tomatoes and 5 tbsp of water. Bring back to the boil, then cover, reduce the heat to low and simmer for 15 minutes, or until the cauliflower is tender.

3. Season lightly, stir in the spinach and cook until just wilted. Serve hot and enjoy!
