Are you ready to say goodbye to summer? This classic tomato soup could make it a little bit easier to welcome in the cooler months, and it’s so easy to make… simply simmer everything together and blitz until smooth. 

There are a few ingredients that might surprise you, but the rich, tangy flavour of the end result will bowl you over. Trust us! 

Slimming World tomato soup recipe

Free 
ready in 30 mins 
vegan 
dairy-free 
freezer-friendly 

What you need: 

2 carrots, peeled and roughly chopped  
2 x 400g cans chopped tomatoes  
½ x 400g can haricot beans, drained and rinsed  
6 pickled silverskin onions  
600ml vegetable stock, suitable for vegans 
1 tbsp tomato purée  
1 tsp Worcestershire sauce, or Henderson’s relish to make it vegetarian/vegan 
1 level tsp sweetener granules 

What you do: 

1. Put all the ingredients in a large non-stick saucepan and simmer for 20 minutes, or until the carrots are soft.  

2. Remove from the heat and blitz until smooth with a stick blender (or use a food processor and return to the pan). Season to taste and divide between 4 bowls.
