Lean, cheap and versatile, chicken mince is a real unsung supermarket hero! We’ve added spice, salad and cheese to make a tasty taco that’s got dinner all wrapped up (in next to no time).
Slimming World chicken tacos recipe

serves 4
7½ Swips per serving (deduct 3 Swips if using the Cheddar as half a Healthy Extra choice)
ready in 15 mins
What you need:
1 cal cooking spray *
500g lean chicken mince (5% fat or less)
2 garlic cloves, crushed
2 tsp smoked paprika
1 tsp ground cumin
½ tsp chilli powder
½ tsp dried oregano
2 tbsp tomato purée
2 tbsp chopped fresh coriander
4 mini tortilla wraps
1 romaine lettuce, shredded
60g cheddar, grated
Optional extra: Top with Slimming World guacamole
What you do:
1. Spray a non-stick frying pan with cooking spray and put it over a medium heat. Fry the chicken mince for 4-5 minutes, then add the garlic and cook for a couple more minutes, until the chicken is browned. Tip in the spices, oregano, tomato purée, a little chopped coriander and 2 tbsp water, and simmer for 5 minutes.
2. Heat the tortillas, if you like, and assemble the tacos – spoon the chicken mixture on to the tortillas and top with the lettuce, cheese, and more chopped coriander.
