In just 35 minutes, you\u2019ve got a rich, spicy lamb stew that tastes like it\u2019s taken hours (we won\u2019t tell).<\/p>\n\n\n\n<p>Perfect for feeding a hungry crowd and keeping your weight loss nicely on track \u2013 now that\u2019s what we call a win-win.<\/p>\n\n\n\n<p><a href=\"https:\/\/www.slimmingworld.co.uk\/group-or-online-membership\"><strong>Discover two great ways to join Slimming World<\/strong><\/a><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Easy Moroccan lamb stew recipe<\/h2>\n\n\n\n<p>serves 4<br>\u00bd Swip per serving<br>ready in 35 minutes<\/p>\n\n\n\n<p><strong>What you need:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>low calorie cooking spray<\/li>\n\n\n\n<li>4 large or 8 small lean lamb leg steaks (visible fat removed), cut into strips<\/li>\n\n\n\n<li>2 large aubergines, cut into finger-thick strips<\/li>\n\n\n\n<li>3 peppers, deseeded and sliced<\/li>\n\n\n\n<li>2 level tbsp harissa paste<\/li>\n\n\n\n<li>400g can chickpeas, drained and rinsed<\/li>\n\n\n\n<li>chopped fresh coriander, to serve<\/li>\n<\/ul>\n\n\n\n<p><strong>What you do:<\/strong><\/p>\n\n\n\n<p>1. Spray a wide, non-stick frying pan with low-calorie cooking spray and place over a high heat. Add the lamb and stir-fry for 5 minutes or until lightly browned.<\/p>\n\n\n\n<ol start=\"1\" class=\"wp-block-list\">\n<li><\/li>\n<\/ol>\n\n\n\n<p>2. Add the aubergines and peppers and stir-fry for 6-8 minutes or until softened. Stir in the harissa paste and stir-fry for another 1-2 minutes.<\/p>\n\n\n\n<p>3. Add the chickpeas and 200ml boiling water, season lightly and bring to the boil. Reduce the heat to low and cook for 8-10 minutes or until most of the liquid has gone, stirring often.
