Christmas is a fantastically foodie holiday, but being constantly surrounded by chocolate, cakes and biscuits can turn a tasty time of year into a test of temptation. The good news is that Slimming World members don’t have to miss out on a single magical morsel. We’re all about keeping the seasonal treats that you enjoy – and giving them a Slimming World twist!

We love to see what our members are making to keep them slimming through the festive season, and Sarah’s scrummy Slimming World mince pies and spiced muffins definitely caught our eye.

Sarah has lost an amazing 3st since becoming a Slimming World group member, and is now a master of the flavoured oaty muffin! Choose between apple & cinnamon or Slimming World mince pie muffins – or give both a try (why not, it’s Christmas!). They’ll bring a festive feel to any breakfast table or lunch box – and they go down lovely with a nice cup of tea.

Santa might even appreciate a couple of Slimming World mince pies leaving out on Christmas eve as a healthier option!

Sarah’s Slimming World mince pies

Makes 6
Ready in 45 mins

What you need:

Basic muffin recipe (7 Syns per batch of 6 muffins) 

40g oats
2 tsp sweetener (plus a touch more to dust)
2 eggs (whisked)
½ tbsp baking powder
2 tbsp fat-free natural yogurt

For Slimming World mince pies (11.5 Syns per batch of 6 muffins) add – 

25g mincemeat
zest of an orange
juice of an orange
½ grated carrot
1 tsp cinnamon
1 tsp mixed spice

For apple & cinnamon muffins (7 Syns per batch of 6 muffins) add –

60g chopped apple (add more if you like them really apple-y!)
1 tsp vanilla essence
½ tsp cinnamon powder

What you do:

1. Mix all the ingredients together
2. Spoon into silicon moulds
3. Bake at 180° for 30-35 mins
4. Dust with sweetener for a snowy festive flourish!
