Day seven

Mushroom frittata

Fry chopped onion in low calorie cooking spray until golden. Add frozen sliced mushrooms and cook until defrosted, then stir through whisked eggs, season and cook until set. Chop into wedges and serve with warmed canned tomatoes.

Cheese and onion sandwich

Pair 30g red Leicester cheese with slices of red onion and sandwich between 2 slices of wholemeal bread from a small 400g loaf.

Serve with a 20g bag of Walkers Quavers (5½ Syns).

Mediterranean vegetable filo tart


This dish is perfect for sharing around the dinner table. Serve with new potatoes and green beans.
